Authentic tonkatsu at Katsu Sora

TONKATSU, Japan’s breaded and deep-fried pork cutlet, is the focus at Katsu Sora. Derived from Japanese terms “katsu,” which is short for tonkatsu and “sora,” which means sky, Katsu Sora is dedicated to offering only the highest quality tonkatsu and a host of other Japanese dishes. This goes with a salad bar with a wide range of greens and fruits. Katsu Sora uses four kinds of world-class pork: Iberico from Spain’s black pigs; Shimofuri pork, also originating from Spain from a pure line of Duroc pigs; Kurobuta pork, from a line of heritage pigs called Berkshire, bred in Kogoshima, Japan; and, Sakura pork, from a grain-fed pig from Canada specially bred for the distinct Japanese taste buds. Customers at Katsu Sora can choose their rice, soup, and ingredients to create their own salad (unlimited refill at the salad buffet bar for all sets). There are also chicken katsu or seafood sets for those diners who are not into pork.
